In an effort to eat more healthy I’ve been adding more greens to our diet. However salad can get old. So I decided to make some wilted garlic greens as a side to dinner the other night. Deliciousness! Unless you ask my husband. He thinks they taste like weeds. But he’s not really into greens.
This week is the first week of the Eat Clean 2014 Challenge that I am doing with a group of bloggers. Each week for a month we will be bringing you clean eating recipes. Not only does this give you some ideas on how to eat clean, but it also helps us to be more aware of what we are eating.
This week I am sharing a quick, easy side to any meal. Garlic greens. They are super yummy. You can use any greens you want. I used kale this time, but I have also used spinach in the past.
- 5 oz baby kale (about 5 loose cups)
- 1 tsp coconut oil
- 1 tsp minced garlic
- Melt coconut oil in a pan over medium to low heat.
- Add the garlic and cook until garlic turns a light brown.
- Using large handfuls, fill up your pan with kale. It won't all fit at once, but once the kale starts to wilt you can add more. Stir kale until it is all wilted.
See? Super easy.
