I love caramel. So what is better than a fresh batch of caramel corn? Nothing. Especially when it’s a batch of the best caramel corn EVER. Seriously. EVER. It’s soft and chewy and buttery and delicious. This recipe is simple and is sure to wow your friends and family. It’s super quick too. The longest part is popping and measuring all the popcorn. I use my DIY microwave popcorn method pop the popcorn. I measure it carefully because I want to keep all the old maids out if possible. No one wants to chomp down on an unpopped kernel. That hurts. You’re going to need a really big bowl for this recipe. It calls for 6 quarts of popcorn. Which is 24 cups. So that’s quite a bit. Plus you’ll need room to stir the popcorn to coat it all in caramel. You can always make a half batch if you don’t have a bowl big enough, but trust me when I say that this caramel corn disappears fast. As I’m writing this Thor is working on the last bit. He barely let me have enough to photograph.
- 6 qt popcorn (24 cups)
- 2 sticks of butter
- 2 cups of brown sugar
- 1/2 cup karo syrup
- 1 tsp salt
- 1/2 tsp baking soda
- 1 tsp vanilla
- Place popcorn in a large bowl.
- Boil butter, brown sugar, karo syrup, and salt for 2-3 minutes so all the sugar dissolves.
- Remove from the heat and add the baking soda and vanilla and mix well.
- Pour over the popcorn and stir to cover evenly.
- Spread on a cookie sheet to cool.
- Store in an air tight container.
You want to boil it long enough that the caramel is not grainy. But if you boil it too long the caramel will become hard when it cools. It might take a couple trys to find the sweet spot, but grainy or hard it always tastes great. Try some tonight. It makes a great treat for movie night.
