Mint and lime is one of my favorite flavor combinations. So better what better way to enjoy them than in a refreshing mint limeade? I’m going to share my recipe for one of my favorite summer time drinks.
My inspiration came from Cafe Rio. I love Cafe Rio. And if you have been to Cafe Rio then you have seen their assortment of drinks. One of which is mint limeade.
I love the mint limeade. Most places I can just get water and be perfectly happy. But not at Cafe Rio.
And I get sad when they run out of it.
Or when the dispenser gets clogged with mint.
Yeah. That happens. So be warned.
You might have a hard time getting your mint limeade on.
So I decided to make my own so I can have that delicious minty citrus taste whenever I crave it.
- 1/2 cup lime juice, freshly squeezed
- 1/2 cup simple syrup
- 1 cup water, cold
- 3 T fresh mint, finely chopped
- SIMPLE SYRUP
- 1/2 cup water
- 1/2 cup sugar
- Make the simple syrup by combining water and sugar over low heat. Cook until mixture is clear and the sugar is dissolved. Remove from heat.
- In a pitcher combine all the ingredients. Stir.
- Serve over ice.
It’s super delicious and refreshing. Plus it’s a nice change from basic lemonade.
What makes this so good is the fresh ingredients. You have to use fresh limes and fresh mint.
I promise. It’s amazing.
This Cafe Rio copycat recipe is just like the real thing.
Except better because you can enjoy it at any time in the comfort of your home.
I think I love it so much because I love limes.
They are my favorite citrus.
I love the way they taste.
I love the way they smell.
I just love limes.
This recipe is even perfect to serve with your Cinco de Mayo meal.
