National Oatmeal Month is here again. Yay! I love oatmeal. It’s tasty and good for you too. What better way to kick off the new year than with something healthy like oatmeal? I had a bunch of dying bananas so I thought I would whip up a batch of banana nut muffins. Then I thought I would add some oatmeal, you know, to make me feel like it’s healthy for me to eat three muffins in one sitting. Add some spices and voila, deliciousness in a little paper cup.
Recipe and Instructions:
Yields: 24 muffins
Ingredients:
- 5 ripe, medium bananas
- 1 1/2 cups oatmeal
- 1 1/2 cups flour
- 3/4 cup brown sugar
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon cardamom
- 1 teaspoon ginger
- 1 teaspoon vanilla
- 1/4 cup butter, melted
- 1/4 cup milk
- 2 eggs
- 1/2 cup pecans
Directions:
- Preheat oven to 350 degrees. Line muffin tin.
- In a large bowl mash bananas until smooth.
- Add remaining ingredients and stir until moistened.
- Place 1/4 cup batter into each muffin liner.
- Bake for 20 minutes or until a toothpick inserted into center muffins comes out clean.
