I LOVE cupcakes. I’m sure I’m not the only one.
So it was a no brainer that we would have cupcakes at our wedding. But not just any cupcakes. Fancy shmancy ones with cream filling. YUM!
Cream filled cupcakes add an extra delicious detail.
My mom’s next door neighbor provided the cream filling recipe and my brother-in-law baked a TON of cupcakes. I remember them fondly, and people were so impressed.
Over the weekend my mom and I baked a batch of cupcakes and we decided to fancy them up with some cream filling. And since they were such a hit at my wedding I thought that I would share them with you for all your swanky cupcake needs.
The filling is super easy, but it is made in two parts.
- Part 1
- 5 T sugar
- 5 T flour
- 1 cup milk
- Part 2
- 1/2 c butter
- 1/2 c white shortening
- 3/4 c sugar
- 1 teaspoon or so vanilla
- Part 1
- Stir sugar and flour into the milk and cook over medium high heat, stirring until thickened.
- Let it cool before adding to the part 2.
- Part 2
- Cream butter, shortening, sugar, and vanilla.
- Add part 1 and mix well.
- If you are coloring your frosting, add food coloring.
- Beat mixture until light and fluffy. Sugar should all be dissolved into the filling.
Once you have your filling made, you can fill a pastry bag. Any tip will do.
Using completely cooled cupcakes, poke the piping tip into the top center of the cupcake. Gently squeeze the bag. You want to put about 2 tablespoons worth of filling into each cupcake.
If you are watching the top of the cupcake you will see it puff up a bit. That means the cupcake is full. If you keep filling past that point you risk exploding the cupcake. Fortunately I have never had this happen to me, but I have heard tales. I would advise filling the cupcakes slowly on your first attempt.
When your cupcake is full, simply remove the pastry tip, filling the hole level with the top of the cupcake. All of your cupcakes will have white dots on top. Not to worry, all you need to cover that up is a little frosting. Or a lot. You choose.
This filling gives a little extra something to your cupcakes. And it makes everyone think you’re an expert baker. So you know, win-win.
Seriously. Try it next time you are in charge of dessert.
