Have you ever tried chia seeds? I love them. And I especially love them in my heart healthy chia seed pudding.
Chia seeds look like poppy seeds, but trust me when I tell you they are not the same. Did you know when you get chia seeds wet their amazing fiber content causes them to swell? When they swell they become a gel coated seed with a crunchy center.
You said their fiber content was amazing, so what do you mean by that?
What I mean is only 1 tablespoon of chia seeds contains 5 grams of fiber. According to WebMD, the average adult woman needs 25 grams a day, while the average adult man needs 38 grams. So this pudding has more than half of my daily fiber recommendation from the chia seeds alone.
Plus chia seeds have omega-3s, which makes this recipe heart healthy. I don’t know about you, but I can always use another source of omega-3s in my life.
This pudding is nutrient packed. Plus is super easy to make. Let’s get started.
- 3/4 cup unsweetened almond milk
- 3 T chia seeds
- 1 T agave
- 1 T ground flax seed (optional)
- 2 T goji berries (optional)
- Mix all ingredients in a dish that has room for expansion.
- Set aside for 20-30 minutes or refrigerate over night.
- Chow down.
See how easy that was? Basically all you’re waiting on is for the chia seeds to expand and thicken the mixture into a “pudding”. So you can wait as little or as long as you want. When I let it sit overnight it is super thick. We’re talking you can see where I have scooped out bites kind of thick.
