Oatmeal raisin breakfast bites are made up of all natural ingredients and with no added sugar they are naturally sweetened. It is like you are eating oatmeal raisin cookies for breakfast. They are great for a snack or a quick bite on the go.
It’s January and that means it’s National Oatmeal Month. So of course I have to share with you my newest oatmeal recipe. These oatmeal breakfast bites are simple to make and easy to take with you on the go. Plus they are full of healthy ingredients to help keep me on track for my goal for the new year to eat better.
- 1/2 cup almonds
- 1/3 cup dates, soaked (about 10)
- 1/3 cup oatmeal
- 1/8 tsp cinnamon
- 1/4 cup raisins
- Place dates in enough warm water to cover them completely and let sit for half an hour.
- Put almonds in food processor and pulse until coarsely chopped.
- Remove dates from water and add to food processor. Pulse until finely chopped and throughly combined with almonds.
- Add oatmeal and cinnamon and pulse until mixed well.
- Lastly add raisins and pulse to distribute them evenly.
- Roll a tablespoon sized amount into a ball. Keep going until all of the mixture is rolled.
- Store in an airtight container.
These are made up of ingredients that I keep on hand so I can make up a quick batch any time. Thor is a huge fan of raisins so I thought that these would make a good, quick breakfast for those preschool mornings. Sadly, he turned up his cute little toddler nose.
I’m still offering them to him. I think if he would just taste them then he would love them. I think they taste a lot like an oatmeal raisin cookie. Who doesn’t want to eat cookies for breakfast? Isn’t that every little kid’s dream?
If you want add an extra little nutrient punch you could toss in some ground flax seed as well. It won’t change the flavor at all. Have you tried breakfast bites before? What is your favorite flavor combo?
