Pistachio Salad is a Thanksgiving staple in our family. Growing up, I can’t remember a Thanksgiving dinner that didn’t have a big bowl of it sitting on the table somewhere. It’s a family favorite. So I thought I would share the recipe with all of you. So it can become a family favorite for you as well.
Now when you read the ingredients, it might sound weird to you, but I promise it’s delicious. It’s creamy, fruity, and the walnuts give it a little bit of crunch. And it’s super easy to make so if you have little hands that want to help in the kitchen this is a good one for them.
- 1 large cool whip
- 1 large can of crushed pineapple, in pineapple juice
- 2 1/2 cups miniature marshmallows
- 2 boxes instant pistachio pudding
- 1/2 cup walnut pieces
- In a large bowl mix pineapple, with juice, and pistachio pudding until throughly combine.
- Fold in cool whip.
- Mix in marshmallows and walnuts.
- ( Optional )Garnish with extra walnut pieces.
This also makes a quick side for any meal. So whenever your menu plan looks like it is missing something, you can probably add pistachio salad. I’m sure that’s exactly what is missing. And it will only take an extra five minutes of prep time. Easy peasy.
Don’t be scared. Give it a try. I am sure it will be a hit with your dinner guests. Assuming that they don’t hate pistachio flavored things. Plus it adds a little something different to a classic Thanksgiving dinner. Who doesn’t want to mix things up a bit?
